Butter Lemon Chicken

Ingredients

    Bone-in, skin-on chicken thighs

  • 1 tbs

    Smoked paprika

  • 3 tbs

    Unsalted butter

  • 3

    Cloves garlic, crushed

  • 250 ml

    Chicken stock

  • 100 ml

    Double Cream

  • 50 g

    Freshly grated parmesan cheese

  • 1

    Juice of lemon

  • 1 tsp

    Dried thyme

  • 2

    Handfuls baby spinach, chopped

Method

    Heat the oven to 200°C.

    Season the chicken with paprika, salt, pepper.

    Sear the chicken in a pan with 2 tbs butter.

  • 4

    Remove the chicken then melt the remaining butter and add the garlic.

    Add the stock, cream, lemon juice, parmesan and thyme.

    Bring the liquid to a boil then add the spinach until wilted.

    Add the chicken and put in the oven with a lid for 30 minutes.
