Shin of Beef

Serves 4-6


  • 1kg

    Boned and netted shin of beef

  • 2

    Large onions

  • 4


  • 3 sticks

    Celery or celeriac if available

  • 1/2 bulb

    Garlic, bashed

  • 1 pint


  • 300ml

    Beef stock

  • 2 springs

    Rosemary and thyme

  • Salt and freshly ground black pepper

    Roughly chop all of the vegetables.

    Add all of the ingredients, including the beef to a heavy casserole dish with lid.

    Make sure that the beef is covered by the liquid.

    Bring quickly to a boil and reduce the heat to a low simmer.

    Leave in the oven, or on the hob for up to 8 hours.

    Remove the beef and reduce the sauce on a higher heat, if required.

    Remove the net from the beef and cut into thick slices and pour sauce over the beef to serve.

    Lovely served with mashed potato with grated fresh horseradish added.
